Swiss chard is excellent both cooked and eaten raw.  The stems carry a bright coloration and can be cooked/chopped (or not) to your liking.  More mature chard will tend to have thicker, slightly more tough stems and may be best cooked, while younger chard will be more tender and versatile.  In either case, Swiss chard is a great, flavorful ,healthy addition to both raw and cooked meals.  Flavor profile is unique, but (in our opinion), in the general genre of spinach.
